  • 12 oysters
  • 1 pink grapefruit
  • 1 to 2 basil leaves
  • 1 shot vodka (optional)
  • 1 tbsp red wine vinegar
  • 1 tsp granulated sugar

Grapefruit & Basil Granita

What could be more refreshing on a warm summer’s evening than a fresh oyster topped with some grapefruit & basil granita? We added a taste of vodka to ours to liven them up a little further.

  1. In a bowl, mix together the juice from the grapefruit, vodka, red wine vinegar, basil, and sugar then stir until the sugar is dissolved.
  2. Put the mixture in the freezer and stir every hour to ensure it doesn’t freeze in a block.
  3. To serve, remove the granita from the freezer and crush it up again with a fork then place a teaspoon on the mixture on each shucked oyster.
