What could be more refreshing on a warm summer’s evening than a fresh oyster topped with some grapefruit & basil granita? We added a taste of vodka to ours to liven them up a little further.
- In a bowl, mix together the juice from the grapefruit, vodka, red wine vinegar, basil, and sugar then stir until the sugar is dissolved.
- Put the mixture in the freezer and stir every hour to ensure it doesn’t freeze in a block.
- To serve, remove the granita from the freezer and crush it up again with a fork then place a teaspoon on the mixture on each shucked oyster.
