Ingredients

  • 1/4 cucumber, diced
  • 1 finely-chopped shallot
  • 1 sliced chilli
  • 1/2 lime, juice
  • 40 ml white rice vinegar
  • 1 tbsp coriander leaves
  • 1 tsp grated lime rind
  • 1 heaped tsp sugar
  • a couple of dashes of fish sauce
  • ground black pepper to taste
  • 24 oysters

Thai Cucumber Mignonette

This Thai cucumber mignonette is a game changer. We thought freshly-shucked oysters couldn’t taste any fresher – we were wrong. This punchy little mignonette will have you reaching for another oyster before you’ve even finished the one in your mouth.

  1. In a jar or small bowl, add all your ingredients and shake well until the sugar is dissolved.
  2. Shuck your oysters and place as much or as little mignonette onto each, and savour.
